FOOD  LICENSING  SITUATION
As many of you are aware the Arena is not allowing us to serve food under their license anymore.  We will need to handle the preparation of our food we sell differently.  In a nutshell: 
May be prepared at home and brought to the Arena

Ÿ  Fruit pies, no cream pies will be accepted, pecan is allowed. All pies must be in plastic bags and labeled with new labels.  Your churches will have the labels.

Ÿ  Candy                          +Peppernuts

Ÿ  Breads                         +Rolls

Ÿ  Jams and Jellies

Have to be made in a Commercial/licensed kitchen

Ÿ  Noodles          +Kuchen - anyone willing to coordinate a             Kuchen baking time at the Academy?  See Marilyn B.

Ÿ  Frozen Entrees            +Verenike

Ÿ  Rhubarb juice concentrate

May be prepared in a church kitchen

Ÿ  Salads                         +Sauerkraut

Ÿ  Sloppy  Joes               +Moos

Ÿ  Egg Rolls                   +Taco Salad meat

Ÿ  Ham Gravy for verenike

Ÿ  Chopped onions, tomatoes, lettuce

Prepared at the Arena

Ÿ  Hotdogs            +Brats

Ÿ  Pork Loins        +Ice cream

Sour cream, butter, salads, moos, should be on ice, cheese and eggs should be in coolers. 

FOR  YOUR INFORMATION

1.      Transportation of food items that need to be kept cool (41 degrees) to the Arena will be a problem.  The Board is working on providing refrigerated trucks, one to Mt. Lake and one to Freeman.  The food chairs will be advised.

2.      The Sioux Falls Board of Health is working with us and are being generous this year in what we are allowed to do.  Our concern is for the following years.  The food portion of the Sale might have to be revamped.

3.      Cleanliness will be a big part of the food service.  Be sure to follow the food safety guides when working with food. 

4.      Please volunteer to help in the food line and to donate foods as you have in the past.  If we all work together we will, with God’s help, succeed!   

5.       We do have our temporary permit from the SF Department of Health to serve food at the Sale this year!  The Sale will go on!

6.       For SD cooks,   Freeman Academy has graciously offered the use of their kitchen, which is licensed, all day Thursday July 22, to be used if needed.  The kitchen will be available from 6:30 A.M. through the evening.  There is cooler space, not freezer space.  To coordinate your time to use it, contact Marilyn Brock Mueller - 925-4632
